A closer look at the science behind dual-extracted mushroom supplements, why hot water and alcohol each unlock different compounds, and what to look for on a label.
It's Not Just About Which Mushroom You Buy
We've written before about the difference between mushroom extracts and raw powder, and about how extract formats like tinctures, powders, and capsules compare. This time, we're going one layer deeper into a question that determines the actual potency of any extract you buy: how it was made.
Two Solvents, Two Different Compound Classes
Mushrooms contain two broad categories of beneficial compounds that don't dissolve in the same way. Beta-glucans and other polysaccharides are water-soluble, so they're pulled out through a hot water extraction process. Triterpenes, sterols, and other lipophilic compounds don't dissolve well in water at all and require alcohol, typically ethanol, to be drawn out effectively. A product extracted with only one method captures only half of what the mushroom has to offer.
Why Order Matters: Water First, Then Alcohol
A true dual extraction starts with a hot water extraction, which pulls out the beta-glucans and other heat-tolerant, water-soluble compounds. The remaining solid material is then steeped in an alcohol and water mixture to draw out the triterpenes and other alcohol-soluble compounds. The two liquid extracts are then combined into a single, full-spectrum product. Reversing that order isn't a minor technicality: exposing beta-glucans to alcohol before they've been properly extracted in water can degrade them, reducing the immune-supportive potency of the final product.
What You Gain With a True Dual Extract
Reishi is a good example of why this matters. Researchers have identified more than 150 individual triterpenes in Reishi, known as ganoderic acids, and studies comparing extraction methods have found that ethanol extraction yields significantly higher concentrations of these compounds than hot water extraction of the same starting material. If a Reishi product only lists beta-glucan content and used a hot-water-only process, its triterpene content is likely minimal, even if the label makes it sound comprehensive.
The reverse is true for mushrooms valued mainly for their polysaccharide content, like Turkey Tail and Maitake, where hot water extraction remains the priority step for capturing the beta-glucans associated with immune cell activity.
How to Read a Label Like an Informed Buyer
When comparing mushroom extract products, look for three things: a clearly stated extraction method (ideally dual extraction, described in enough detail that it's clear both steps happened), a stated beta-glucan percentage rather than a vague total polysaccharide number, and confirmation that the product is made from fruiting bodies rather than mycelium grown on grain, since fruiting bodies generally contain a much richer concentration of the bioactive compounds an extraction process is designed to capture.
